I could eat guacamole everyday! It’s delicious, satisfying, healthy, versatile and it couldn’t be easier to make! I whip up a bowl full every few days for topping garden burgers and quesadillas or to eat with our favorite tortilla chips.

Since I always have a batch of homemade pico de gallo in the refrigerator, making guacamole takes just minutes! I simply add a few scoops of my pico de gallo to a mashed avocado or two and stir in a dash of salt and cumin. That’s it! To make guacamole without ready made pico de gallo, use this recipe.

2 medium avocados
1/3 cup diced tomatoes
1/4 cup diced red onion
2 tbsp. minced cilantro
1 tsp. minced jalapeno pepper
1/2 tsp. cumin
salt to taste

Scoop flesh of avocados into a mixing bowl and mash with a fork. Stir in tomatoes, onions, cilantro, jalapeno peppers, cumin and salt. Enjoy!

Prep. time 15 min.
Serves 4-6

Note: If you don’t plan to eat your guacamole immediately or need to refrigerate the leftovers, add a squeeze of fresh lime juice to keep the avocado from darkening. I prefer the flavors of the guacamole without lime so I don’t include it in my recipe.
