Once upon a time, when I shared a photo of my peach salad recipe on Facebook and Instagram, I got a comment that I made freakishly healthy food look amazing. Well…I took that as a compliment and must tell you that this peach salad is amazing and you’ll just have to try it to believe it!
Sweet, refreshing, crunchy and flavorful this salad is tossed all summer long at our house, yet it’s never the same dish twice since I’m always switching up the fruit and use whatever fresh vegetables we have in the refrigerator. Omit the onions if you like or add some cabbage, but whatever you do, to make this healthful salad it must include dark leafy greens, fresh fruit and vegetables, the balsamic dressing and my Super Seeds & Nuts mixture or it’s just another salad.
Mixed dark leafy greens (arugula, chard, kale, spinach, et. al.)
Fresh herbs (basil, cilantro, parsley, et. al.)
Red bell pepper
Fresh fruit (blueberries, cantaloupe, grapes, peach, strawberries, watermelon, et. al.)
1/2 cup olive oil
1/2 cup balsamic vinegar
1/2 tsp. turmeric powder
1/2 tsp. pepper
In a small jar combine dressing ingredients, stir with a spoon and set aside. For individual salads cover the bottom of each plate or bowl with greens . Then dice whatever fresh colorful veggies you have in your refrigerator, one at a time, layering them on top of the greens as you go. Finally add diced fresh fruit, sprinkle with toppings and drizzle with a couple tablespoons of dressing.
